These no bake goodies are allergy friendly, easy to make and perfect for May the fourth!

As a Disney mom in a household with food allergies, I’m always trying out new recipes! These did not disappoint! Made from whole food and good for you ingredients, we gobbled these down fast!
We love everything Star Wars related but when we go to the parks we’re often limited on some of the different food offerings. With May the Fourth coming up I figured what better time to share these filling energy balls with you!
These balls are made with protein and healthy fats to help keep your kiddos fuller for longer. This recipe is easily customizable to meet your own families dietary and allergy needs which makes this a quick and easy snack everyone can enjoy! We used peanut butter in our recipe since everyone in our family can tolerate it but if you’re nut free, simply sub sunflower seed butter instead!
Wookiee Cookie Bites Ingredients:
1/2 Cup of peanut butter (or sunflower seed)
1/2 Cup maple syrup
1 tsp. vanilla
1/2 Cup quick oats (we used gluten free ones)
2-3 Tbsp. Shredded coconut
top with vegan marshmallow fluff
1-2 dashes of Cinnamon
1 tsp. Nutmeg
1 tsp. Salt
optional mix ins: 1/4 Cup Dairy free Chocolate Chips or raisins!
To Make:
Mix all of the wet ingredients. Then add in the dry ingredients. If doing mix ins, fold those in last. Form small balls between your hands. Chill in the fridge for 20-30 minutes.
After the balls have had plenty of time to chill and harden a bit, you can add the marshmallow fluff topping! I simply put mine into a small baggie and cut the tip off. Then I squeezed it onto the tops of the bites.
And that’s it! These no bake, Star Wars inspired treats are sure to be a hit! Easy, clean ingredients and no hot oven during these warmer months! Perfect for a day at Disney or on the go!
