Have you seen the new Zootopia 2 movie? It’s now on Disney + and we watched it the other night. I just love the first one so I wasn’t sure how well I would like the second one. It did not disappoint. We thought it was great!

We are an allergy friendly household so any time I can get my hands on a fun and easy recipe that me and my kids will love I hop on it! (see what I did there?) And bonus, you probably already have most of these ingredients on hand! All of these recipes were super simple and easy to make. Not to mention, kid approved!

Seriously, these recipes are sure to be a hit! Perfect for pairing with the movie during a fun family movie night or for Easter or really anytime. These are handy options for on the go as well.

Judy Hopps’ Carrot Cake Muffins:

Ingredients:

To make this recipe you’re going to need the following:

1 1/2 Cups of finely grated carrots (packed)

1 Cup of cassava flour or paleo blend

1 TBSP of ground flax plus 3 TBSP of water

1/4 cup of avocado oil or coconut oil

1/4 Cup of maple syrup

1/2 tsp baking powder

1tsp cinnamon

1/4 tsp ginger

pinch of salt

1 tsp vanilla

unsweetened applesauce (one pouch or 3.2 oz)

one medium ripened banana

1/4 cup of raisins (optional)

frosting: (optional but i wouldn’t omit because it is soo good!) Add non-dairy yogurt with maple syrup and cinnamon to taste.

To make: you’re simply going to prepare your flax egg and let it thicken while combining the wet ingredients with the shredded carrot. Then add the wet to dry ingredients and bake at 350 degrees for 18-22 minutes. To add even more sweetness you can make a frosting with coconut yogurt, maple syrup and cinnamon. Yum! My kiddo decided to add allergy-friendly marshmallows to his.

No Bake Carrot Donut Holes:

Ingredients:

1 1/2 Cups of grated carrots

3/4 Cup shredded coconut

2 TBSP maple syrup

1 TBSP avocado oil or coconut oil

1 tsp cinnamon

1/4 tsp vanilla

to make: simply mix into balls and chill for 30 minutes! Doesn’t get easier than that! This would be a healthy option for on the go as well!

Carrot Snack Dippers with Dairy-free ranch:

ingredients:

1/2 Cup coconut yogurt

1/2 tsp dried dill

1/2 tsp dried parsley

1/4 tsp onion powder

pinch of garlic powder

salt and lemon to taste

to make: add all of the ingredients and dip your veggies of choice! You could also dip crackers as well. This recipe was better than I even expected! Simple and quick but so tasty! Add some of your favorite crackers or veggies and you have a delicious, allergy-friendly snack.
